Ingredients

  • 3eggs
  • 5 tbsppsyllium husk
  • ½ tspcornstarch
  • 2 tspboiling water
  • salt

    to taste

  • sesame seeds

    for topping

  • vegetable oil

    for greasing

Instructions

  1. Whisk 3 eggs with salt until fluffy.

  2. Stir 1/2 teaspoon cornstarch with 2 teaspoons boiling water into a slurry and add to the eggs.

  3. Fold in 5 tablespoons psyllium husk and let rest briefly to thicken.

  4. Shape the batter on an oiled tray, sprinkle with sesame.

  5. Bake at 180°C for until firm. Serve with cottage cheese, spinach or cucumber toppings.
