Oat Bread with Zucchini and Carrots
Aromatic flour-free oat bread made with zucchini, carrot puree and sunflower seeds. Yeast-risen loaf finished with flaxseed and sesame.

Ingredients
- 200 gzucchini
- 200 gcarrots
- 350 mlwater
- garlic
- 250 grolled oats
- salt
to taste
- sweet paprika
- curry powder
- 5 gdry yeast
- 20 gsunflower seeds
pan-toasted
- 20 gsesame seeds
pan-toasted
- 30 gflaxseed
- 30 mlolive oil
- 100 grolled oats

Instructions
Blend zucchini, carrots, water and garlic into a puree
Mix oats, salt, sweet paprika and curry
Add dry yeast and let rise in a warm place for
Pan-toast sunflower and sesame seeds
Fold seeds, flaxseed and olive oil into the dough
Add extra oats to thicken
Grease a loaf pan and transfer the dough, sprinkle with flaxseed
Cover and rest
Bake at 180 C for 50-

Yes oat flour is still flour. But better for my blood sugar than wheat so I use it.
