  • 240 gflaxseeds

    ground

  • 40 gpsyllium husk powder

    about 4 tablespoons

  • 2 tspbaking powder
  • pinchsalt

    to taste

  • 1 tbspground coriander

    plus more for topping

  • 360 mlboiling water

    1.5 cups

Instructions

  1. Combine 240g ground flaxseeds, 40g psyllium husk powder, 2 teaspoons baking powder, salt and 1 tablespoon ground coriander in a bowl.

  2. Pour over 1.5 cups (about 360ml) boiling water and mix quickly until the dough thickens and comes together.

  3. Transfer to a greased loaf tin, shape and smooth the top, then sprinkle with extra coriander.

  4. Bake at 180°C for about , until firm and a skewer comes out clean. Cool fully before slicing.
