Cottage Cheese Almond Pizza Flatbread

Tender flatbread with cottage cheese, shredded mozzarella and almond flour. Baked crisp and ready for garlic-dill or mushroom cream toppings.

Ingredients

  • 220 gcottage cheese

    5-9%

  • 2eggs
  • salt

    to taste

  • ½ tspdried garlic
  • dried thyme

    to taste

  • 100 gmozzarella

    shredded

  • 75 galmond flour

Instructions

  1. Blend cottage cheese with eggs until smooth, then stir in salt, dried garlic, thyme and mozzarella.

  2. Fold in almond flour until the dough holds its shape.

  3. Spread into 6 flatbreads on a lightly oiled baking sheet and bake at 375°F (190°C) for 8- until set.

  4. Add toppings of choice and bake 6- more until the cheese bubbles and the edges crisp.
