Keto sandwich loaf from almond flour bolstered with ground walnuts, Parmesan and psyllium. Yogurt keeps the crumb moist; sesame and pumpkin seeds crown the top.

Ingredients

Ingredients updated to metric measurements
  • 100 galmond flour
  • 10 gbaking powder
  • salt

    to taste

  • 1 tspdried garlic
  • 10 gpsyllium husk
  • 100 gwalnuts

    ground

  • 50 gParmesan

    grated

  • 3eggs
  • 120 mlyogurt

    unsweetened, liquid

  • 30 mlolive oil
  • 1 tsppumpkin seeds

    for topping

  • 1 tspsesame seeds

    for topping

Instructions

  1. Whisk 100g almond flour, 10g baking powder, salt, dried garlic and 10g psyllium.

  2. Blend 100g walnuts until fine and add with 50g grated Parmesan.

  3. Whisk 3 eggs with 120ml yogurt and 30ml olive oil, stir into the dry mixture and rest .

  4. Line a baking dish with damp parchment, oil your hands, shape the loaf and sprinkle with pumpkin and sesame seeds.

  5. Bake at 180°C (350°F) for 40- until a skewer comes out clean.
