Dense seed bread made entirely from sunflower seeds, flaxseed, psyllium and eggs. Baked until firm and topped with sesame for a grain-free loaf.

Ingredients

  • 150 gsunflower seeds
  • 30 gflaxseed

    ground

  • 30 gpsyllium husk
  • pinchsalt
  • 4eggs
  • 15 mlolive oil
  • 1 tspbaking soda
  • 1 tbspapple cider vinegar
  • sesame seeds

    for topping

Instructions

  1. Blend sunflower seeds to a fine meal and mix with ground flax, psyllium and salt.

  2. Whisk in eggs, olive oil and apple cider vinegar; stir in baking soda last and rest .

  3. Transfer to a greased loaf pan, drizzle with more oil, score the top and scatter sesame seeds across the surface.

  4. Bake at 350°F (180°C) for 40- until firm; cool completely before slicing.
