  • 2 tbspsunflower seeds

    ground

  • 2 tbsppumpkin seeds

    ground

  • 2 tbspflaxseeds

    ground

  • 1 tbspsesame seeds
  • pinchsalt
  • tsporegano
  • tspdry garlic
  • 5 gbaking powder
  • parsley

    chopped

  • olive oil

    for the pan

Instructions

  1. Grind 2 tablespoons each of sunflower, pumpkin and flax seeds in a coffee grinder.

  2. Whisk 2 eggs with the ground seeds, 1 tablespoon sesame seeds, salt, oregano, dry garlic, 5g baking powder and chopped parsley until smooth.

  3. Heat olive oil in a non-stick pan over medium heat. Pour in the batter and spread evenly, then cover.

  4. Cook covered until set on the bottom, flip carefully and cook the other side until deep golden. Serve warm.
