No-Flour Cottage Cheese Flatbread

  • 225 gCottage cheese

    Full-fat or low-fat

  • 2 largeEggs
  • 2½ gGarlic powder
  • 5 gItalian seasoning
  • 1½ gSalt

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. Blend cottage cheese and eggs together until completely smooth.

  3. Stir in garlic powder, Italian seasoning, and salt.

  4. Pour the batter onto the prepared baking sheet and spread into a thin rectangle (about 1/4 inch thick).

  • Spread the batter as thin as possible for a crispier result
  • Add your favorite herbs or spices to customize the flavor
  • Use as a wrap, pizza base, or serve alongside soups and salads

This flatbread is my favorite protein-packed bread substitute. The texture is surprisingly close to real flatbread!
