Nourishing protein loaf from soaked lentils, eggs and almond flour with coriander and sesame. Bakes to a tender crumb for slicing or toasting.

Ingredients

  • 160 glentils

    soaked several hours

  • 3eggs
  • 30 mlolive oil
  • 100 galmond flour
  • 5 gbaking powder
  • salt

    to taste

  • 1 tspcoriander
  • 30 gsesame seeds

Instructions

  1. Soak 160g lentils for several hours, rinse and drain.

  2. Blend the lentils with 3 eggs and 30ml olive oil until smooth.

  3. Stir in 100g almond flour, 5g baking powder, salt, 1 teaspoon coriander and 30g sesame seeds.

  4. Transfer to a greased loaf pan, sprinkle with remaining sesame and bake at 180°C (350°F) for 40- until firm; cool before slicing.
