Ingredients

  • 3eggs
  • 200 gcottage cheese
  • salt

    to taste

  • ½ tspItalian herbs
  • ½ tspdried garlic
  • 30 gchia seeds

    ground

  • ½ tspbaking powder
  • 50 gcream cheese

    for filling

  • 2 tbspcucumber

    finely grated, for filling

  • 1garlic clove

    for filling

  • chicken breast

    boiled, for filling 1

  • 1 cantuna

    drained, for filling 2

  • sun-dried tomatoes

    for filling 2

Instructions

  1. Blend the eggs and cottage cheese until smooth with an immersion blender.

  2. Stir in salt, Italian herbs, dried garlic, ground chia seeds and baking powder. Rest so the chia thickens the batter.

  3. Spread the batter thinly on parchment paper, spray with a little vegetable oil and bake one flatbread at a time until golden and pliable.

  4. Stack the finished flatbreads and cover with a cloth to stay soft.

  5. For filling 1, mix cream cheese with grated cucumber, salt, parsley and garlic, then layer with boiled chicken and lettuce. For filling 2, combine tuna with lemon zest and juice, pepper, Greek yogurt, marinated red onion and sun-dried tomatoes, then wrap with lettuce.
