Ingredients

  • 200 gred lentils

    soaked at least 4 hours, then drained

  • 80 gcheese

    grated

  • chives

    chopped

  • 2eggs
  • 1 tbspsour cream
  • 35 mlolive oil
  • ½ tspbaking powder
  • ½ tspground coriander
  • ½ tspsalt
  • onion

    finely chopped

  • flaxseed

    for topping

Instructions

  1. Soak 200g red lentils in 700ml water for at least , then drain.

  2. Blend the lentils with 2 eggs, 1 tablespoon sour cream and 35ml olive oil until smooth.

  3. Stir in 1/2 teaspoon baking powder, 1/2 teaspoon ground coriander, 1/2 teaspoon salt, the grated cheese, chopped chives and onion.

  4. Grease a loaf pan with oil, transfer the batter and level the surface. Sprinkle flaxseed over the top.

  5. Bake at 180°C for until the loaf is set and golden. Cool before slicing.
