- 350 gbroccoli
- 2eggs
- 2 tbspoat bran
- 250 gricotta
- dill
chopped
- 150 gmozzarella
- salt
- ½ tspbaking powder
Instructions
Blend 350g broccoli with 2 eggs until smooth, then fold in 2 tablespoons oat bran and rest to hydrate.
Stir in 250g ricotta with chopped dill until fully incorporated.
Fold in 150g mozzarella, salt and 0.5 teaspoon baking powder, mixing gently to keep cheese pieces visible.
Oil a loaf tin, transfer the dough and brush the top with olive oil.
Bake at 180°C for 40-, then switch to top-and-bottom convection for until golden.
