Ingredients

  • 350 mlwater

    warm

  • 1 tspsugar-free syrup
  • 7 gdry yeast
  • 300 goats

    ground to flour

  • 1 tspsalt
  • 30 mlolive oil
  • rolled oats

    for topping

Instructions

  1. Stir 350ml warm water, 1 teaspoon sugar-free syrup and 7g dry yeast; let stand until foamy.

  2. Grind 300g oats into flour and combine with 1 teaspoon salt in a large bowl.

  3. Pour in the activated yeast with 30ml olive oil and work in the oat flour a third at a time until a soft dough forms.

  4. Oil your hands, shape into a loaf, transfer to an oiled tin and sprinkle with rolled oats.

  5. Drizzle with olive oil, rest 15-, then bake at 220°C (430°F) for until deep golden.
