Ingredients

  • 350 mlwater

    lukewarm

  • 7 gdry yeast
  • 1 tbspsugar-free syrup
  • 30 mlolive oil
  • 400 goat flour
  • 1 tspsalt
  • rolled oats

Instructions

  1. Whisk 350ml lukewarm water with 7g dry yeast, 1 tablespoon sugar-free syrup and 30ml olive oil until the yeast dissolves.

  2. Add 400g oat flour in portions, mixing between each, then knead in 1 teaspoon salt until the dough is smooth and elastic.

  3. Transfer to an oiled loaf tin, level the top, scatter rolled oats on the surface and cover. Let rise in a warm spot for 30-.

  4. Bake at 220°C for , until the crust is golden and crackling. Cool fully before slicing — gluten-free bread stales quickly, so store no more than 3 days.
