Soft Oat Flour Bread Without Sugar — I Bake It Every Day
An amazingly soft oat-flour bread with a crispy crust, baked without sugar and without wheat flour. Made with only oat flour, yeast, water and olive oil.

Ingredients
- 400 goat flour
- 7 gdry yeast
- 1 tspsalt
- 350 mlwater
- 30 mlolive oil
- 1 tbspsugar-free syrup
- rolled oats
for topping
Instructions
Mix oat flour, dry yeast and salt; make a well in the center.
Add water, olive oil and sugar-free syrup, then knead the dough with a mixer.
Oil a baking form and transfer the dough into it.
Brush the top with oil and sprinkle rolled oats on top.
Cover and let rest in a warm place for .
Bake at 220 degrees C for .
Let the bread cool before slicing; store no longer than 3 days.

Soft and mild. No sugar and it still tastes good.
A bit gummy if underbaked. Go the full baking time even if it looks done — worth the patience. Mine needed an extra 10 minutes beyond what the recipe stated. Tap the bottom and listen for a hollow sound before pulling it out.
