Pumpkin Oat Kefir Bread (No Flour)
Moist pumpkin oat loaf enriched with kefir, a single egg and crunchy pumpkin seeds. Five ingredients, one pan, simply hearty.

Ingredients

- 200 mlkefir or yogurt
- 1egg
- 170 gpumpkin
puréed
- 250 grolled oats
- salt
- ½ tspbaking powder
- pumpkin seeds
for topping
Instructions
Steam or roast the pumpkin until very soft, then mash into a purée.
Whisk kefir with the egg and pumpkin purée.
Fold in oats, salt and baking powder to a sticky batter.
Spread into an oiled loaf pan and sprinkle pumpkin seeds on top.
Bake at 180°C for 40- until the top is deep orange-gold.
Cool in the pan before slicing.
