Omega-3 Seed Bread (More Omega-3 Than Salmon)
Plant-based seed bread with pumpkin, sunflower and flax seeds. Flour-free, sugar-free, rich in plant omega-3 (ALA) and fiber.

Ingredients
- 60 gpumpkin seeds
- 140 gsunflower seeds
half ground
- 60 gflaxseed
half ground
- salt
to taste
- 1 tspsun-dried tomatoes
- 1 tsporegano
- 20 gpsyllium husk
- 10 gbaking powder
- 3 pieceeggs
- 120 mlwater
- 30 mlolive oil
Instructions
Grind half the sunflower seeds in a blender
Grind half the flaxseed in a coffee grinder
Mix all seeds with salt, sun-dried tomatoes and oregano
Add psyllium and baking powder
Stir in eggs, water and olive oil
Mix well and let rest
Grease a loaf pan and shape the dough
Sprinkle with pumpkin and sunflower seeds
Bake for 40- at 180 C (350 F)

Baked it twice already. Seeds give a satisfying crunch throughout the loaf.
Perfect texture. Holds together when sliced thin.
Needs more salt than the recipe says. Texture is good but bland without extra seasoning.
Good nutritional profile but mine came out a bit flat. May have overmixed the batter.
