Oatmeal Nut Bread
Flour-free, egg-free oatmeal bread with almonds, pumpkin and sunflower seeds. Sweetened lightly with honey and bound by psyllium-free boiling water dough.

Ingredients
- 50 gpumpkin seeds
- 60 galmonds
- 70 gsunflower seeds
- 1 tspwhite sesame seeds
- 1 tspblack sesame seeds
- 60 gflaxseed
ground
- coriander
- 150 grolled oats
- 1 tspsalt
- 40 gcoconut oil
- 1 tbsphoney
- 400 mlboiling water
Instructions
Grind 1/3 of pumpkin seeds, almonds and sunflower seeds in a blender
Mix with whole nuts and seeds, sesame seeds and ground flaxseed
Add coriander, rolled oats and salt
Stir in coconut oil and honey
Pour over boiling water and mix well
Let the dough rest
Transfer to an oiled loaf pan and sprinkle with coriander
Bake at 180 C for 40-
