  • 100 gsunflower seeds

  • 100 gpumpkin seeds

  • 80 galmonds

    pan-toasted

  • 80 gcashews

    pan-toasted

  • 80 gflaxseed
  • 20 gchia seeds
  • 20 gpsyllium
  • 1 tspsalt
  • 200 gcanned beans

    with 200g liquid

  • 30 mlolive oil
  • 140 mlwarm water
  • raisins

    a handful, optional

  • coriander

    for topping

Instructions

  1. Toast sunflower seeds, pumpkin seeds, almonds and cashews in a dry pan.

  2. Combine 200g oats with the toasted nuts and seeds, 80g flaxseed, 20g chia, 20g psyllium and 1 teaspoon salt.

  3. Blend 200g canned beans with 200g of their liquid and add 30ml olive oil plus 140ml warm water.

  4. Stir the wet into the dry; fold in raisins if desired.

  5. Transfer to a greased baking dish, top with coriander and a drizzle of oil; rest .

  6. Bake at 180°C for 60-; cool before slicing.
