Ingredients

  • 2bananas

    very ripe, mashed

  • 2eggs
  • 200 gyogurt

    or thick kefir

  • 250 goats

    150g + 100g

  • 10 gbaking powder
  • 1 gvanilla
  • olive oil

    for greasing

  • 1banana

    for topping

Instructions

  1. Blend 2 very ripe bananas smooth. Whisk in 2 eggs and 200g yogurt or thick kefir.

  2. Stir in 150g oats, 10g baking powder and 1g vanilla.

  3. Mix in another 100g oats, knead lightly and rest .

  4. Grease a loaf pan with olive oil and spread the batter evenly.

  5. Top with banana slices.

  6. Bake at 180°C for , finishing the last on top-and-bottom convection. Check with a skewer before cooling.
