Crusty dark bread made from ground flaxseed and psyllium, shaped into three batons and finished with garlic rub. Vegan, flour-free and gluten-free.

- 240 gflaxseed
ground in a coffee grinder
- 2 tspbaking powder
- salt
to taste
- 40 gpsyllium
- 320 mlhot water
- olive oil
for brushing
- coriander
for topping
- garlic
for rubbing after baking
Instructions
Mix 240g ground flaxseed with 2 teaspoons baking powder, salt and 40g psyllium.
Pour in 320ml hot water and stir until the dough holds together.
Divide the dough into 3 parts and shape into batons; place in a baking dish.
Brush with olive oil and sprinkle with coriander.
Bake at 180°C for 30-; cool then rub the crust with fresh garlic.
