Flaxseed and Cashew Bread
A flour-free, yeast-free bread built on flaxseed, psyllium and cashews. Gluten-free loaf with a low glycemic index, served with avocado and bell pepper spread.

Ingredients
- 250 gflaxseed
- 40 gpsyllium husk
- salt
a little
- coriander
- 10 gbaking powder
- 100 gcashews
- 350 mlwater
- vegetable oil
a little
Instructions
Mix flaxseed, psyllium, salt, coriander and baking powder
Grind cashews and add to the dry mixture
Pour in water and stir into a dough
Let rest until thickened
Transfer to an oiled baking pan
Sprinkle with ground coriander
Bake until firm
