Ingredients

  • 160 gred lentils

    ground

  • 10 gbaking powder
  • 40 gpsyllium husk
  • 40 gwalnuts
  • 30 gsunflower seeds
  • 250 mlkefir

    or liquid yogurt

  • 30 mlolive oil
  • 1 tbspsugar-free syrup
  • 2eggs
  • 30 graisins
  • ginger

    a pinch

  • cinnamon

    a pinch

  • nutmeg

    a pinch

  • salt

    to taste

Instructions

  1. Grind 160g red lentils into flour and mix with salt, ginger, cinnamon, nutmeg, baking powder and 40g psyllium.

  2. Fold in 40g walnuts and 30g sunflower seeds.

  3. Whisk 250ml kefir, 30ml olive oil, 1 tablespoon sugar-free syrup and 2 eggs, then stir into the dry mixture.

  4. Fold in raisins and transfer to a greased baking dish. Score the top and sprinkle with sesame.

  5. Bake at 180°C for 40- until deeply golden. Cool before slicing.
