Ingredients

  • 160 gchickpeas

    ground

  • 50 graisins

    soaked in boiling water

  • 30 gpumpkin seeds
  • 30 gsunflower seeds
  • salt
  • Italian herbs
  • 40 gpsyllium husk
  • 200 gpumpkin

    puréed

  • 350 mlwater
  • 25 mlolive oil
  • coriander

    for topping

Instructions

  1. Grind the chickpeas into flour and whisk with psyllium, salt, herbs and seeds.

  2. Purée the cooked pumpkin and combine with water, olive oil and soaked raisins.

  3. Stir the wet ingredients into the dry mix to a thick, sticky dough; rest .

  4. Transfer to an oiled baking pan, drizzle with extra oil and scatter coriander on top.

  5. Bake at 190°C for 40- until the crust is firm and deep orange.

  6. Cool fully before slicing.
