Ingredients

Ingredients updated to metric measurements
  • 60 gpumpkin seeds

    ground

  • 60 gsunflower seeds

    ground

  • 60 gsesame seeds

    ground

  • 20 gpsyllium husk
  • 60 gflaxseed

    ground

  • ½ tspsalt
  • ½ tsporegano
  • 3 pieceeggs
  • 135 gGreek yogurt
  • 30 mlolive oil
  • 10 gbaking powder

Instructions

  1. Grind pumpkin, sunflower and sesame seeds in an immersion blender

  2. Grind flaxseed in a coffee grinder

  3. Mix all seeds with psyllium husk, salt and oregano

  4. Add eggs, Greek yogurt and olive oil, mix well

  5. Add baking powder and stir

  6. Spray a loaf pan with vegetable oil

  7. Press the dough firmly into the pan and make slits

  8. Sprinkle with pumpkin and sunflower seeds

  9. Let rest for 5-

  10. Bake for 45- at 180 C (350 F)

  11. Let the bread cool before slicing

Worked on my first try. My tummy felt good after two slices which is rare for me.

Made this yesterday and it is wonderful. The texture is amazing, could cut really thin slices today. Made an open tomato sandwich and it was great. My husband complained about seeds on the floor but he ate four slices so I think that is not a real complaint.

Have a loaf in the oven now. Smells great but the texture after cooling was completely wrong, like rubber. Not sure what happened.
