    very ripe, mashed with a fork

  • 3eggs
  • 60 mlsugar-free syrup
  • 60 mlolive oil
  • pinchsalt
  • 35 galmond flour
  • 125 grice flour
  • 80 goats
  • 1 tspbaking powder
  • almond flakes

    for topping

Instructions

  1. Mash 2 very ripe bananas with a fork, then whisk in 3 eggs, 60ml sugar-free syrup, 60ml olive oil and a pinch of salt.

  2. Stir in 35g almond flour, 125g rice flour, 80g oats and 1 teaspoon baking powder until the batter is smooth.

  3. Grease a loaf tin with olive oil, pour in the batter and level the surface. Scatter almond flakes over the top.

  4. Bake at 180°C for , using top-and-bottom convection for the final . Check doneness with a wooden skewer.

  5. Cool completely before slicing — the crumb stays soft for several days.
