- 2bananas
very ripe, mashed with a fork
- 3eggs
- 60 mlsugar-free syrup
- 60 mlolive oil
- pinchsalt
- 35 galmond flour
- 125 grice flour
- 80 goats
- 1 tspbaking powder
- almond flakes
for topping
Instructions
Mash 2 very ripe bananas with a fork, then whisk in 3 eggs, 60ml sugar-free syrup, 60ml olive oil and a pinch of salt.
Stir in 35g almond flour, 125g rice flour, 80g oats and 1 teaspoon baking powder until the batter is smooth.
Grease a loaf tin with olive oil, pour in the batter and level the surface. Scatter almond flakes over the top.
Bake at 180°C for , using top-and-bottom convection for the final . Check doneness with a wooden skewer.
Cool completely before slicing — the crumb stays soft for several days.
