Ingredients

  • 75 gflaxseed

    ground

  • 30 gchia seeds

    ground

  • pinchsalt
  • 1 tspbaking powder
  • coriander
  • 120 gsunflower seeds

    toasted

  • 30 gsesame seeds

    ground

  • 3eggs
  • 225 gapples

    grated, 2 apples

  • sesame seeds

    for topping

Instructions

  1. Grind 75g flax and 30g chia, then mix with salt, 1 teaspoon baking powder and coriander.

  2. Toast 120g sunflower seeds, grind 30g sesame in a blender and add both to the bowl.

  3. Whisk 3 eggs until foamy and mix with 225g grated apples, then combine with the seed mixture.

  4. Shape into a loaf on a greased tray, drizzle with oil and sprinkle with sesame.

  5. Bake at 180°C (350°F) for 45- until the crust is deep golden and the centre set.
