2-Ingredient Chickpea Bread
Minimalist chickpea bread made from just soaked chickpeas and psyllium, with salt, coriander and olive oil. No flour, eggs, yeast or baking powder.

Ingredients
- 150 gchickpeas
soaked 12 hours
- 100 mlwater
- salt
- 25 gpsyllium husk
- coriander
- olive oil
Instructions
Soak chickpeas in water for , then drain
Blend chickpeas with 100 ml water into a puree
Add salt and mix
Stir in psyllium and let rest
Fold in hand-chopped coriander
Drizzle with olive oil
Shape the loaf and score the top
Sprinkle with coriander
Bake at 200 C for 45-

I have been managing celiac disease for twelve years and stopped expecting bread to taste good. Everything from the supermarket leaves me bloated or tastes like cardboard. I tried this on a Tuesday evening with almost no hope. It is dense and satisfying, holds together when sliced, and my stomach felt fine the next morning. Made it four times in two weeks.
