Incredibly simple bread from fermented green buckwheat and salt — nothing else. Vegan, yeast-free, self-rising and crisped with toasted sunflower seeds.

Ingredients

  • 560 ggreen buckwheat

    soaked 12 hours

  • 390 mlwater
  • 6 tbspsunflower seeds

    optional, pan-toasted

  • 1 tspsalt
  • flaxseed

    for topping

Instructions

  1. Soak 560g green buckwheat , then drain and rinse thoroughly.

  2. Blend with 390ml water until smooth; ferment at room temperature .

  3. Toast 6 tablespoons sunflower seeds in a dry pan and fold into the risen batter with 1 teaspoon salt.

  4. Transfer to a buttered loaf pan, sprinkle with flaxseed and bake at 180°C for .

  5. Cool thoroughly before slicing; remaining slices can be dried for crackers at 140-160°C for .
