- 100 mlkefir
or unsweetened yogurt
- 120 galmond flour
- 1½ tspbaking powder
- 1 tsppsyllium husk
- 1 tbspvegetable oil
- 15 gbutter
- 1onion
- 200 gground beef
- salt
to taste
- black pepper
- 30 gspinach
fresh
- 15 gcilantro
or parsley, chopped
- 100 gmozzarella
shredded
Instructions
Whisk 3 eggs with 100ml kefir, then stir in 120g almond flour, 1.5 teaspoons baking powder and 1 teaspoon psyllium until smooth.
Sauté 1 chopped onion in 1 tablespoon oil and 15g butter, add 200g ground beef and cook until browned; season and stir in 30g spinach and 15g cilantro.
Line a pan with damp parchment, spread half the batter, top with the beef mixture and 100g shredded mozzarella, then cover with the remaining batter.
Drizzle with oil and bake at 180°C (350°F) for until the top is deep golden.
