High-Protein Cottage Cheese Oat Trifle (No Sugar)

Layered breakfast trifle with yogurt, oats, walnuts, raspberries and a soft chocolate-banana sponge topped with creamy cottage cheese. No added sugar, no flour.

Ingredients

  • 1banana
  • 2 tbspcocoa powder
  • 1egg
  • ½ tspbaking powder
  • olive oil

    for greasing

  • 50 gwalnuts

    pan-toasted, chopped

  • oats
  • 250 mlyogurt
  • raspberries

    fresh

  • sugar-free syrup
  • 250 gsoft cottage cheese
  • 1 tbspsour cream
  • 3 tbspsugar-free syrup

    or honey, for cottage cheese

Instructions

  1. Blend 1 banana, 2 tablespoons cocoa, 1 egg and 1/2 teaspoon baking powder until smooth. Bake in a 15cm greased dish at 180°C for to make a chocolate sponge.

  2. Toast 50g walnuts in a dry pan and chop with a knife.

  3. In two glasses, layer 250ml yogurt, oats, walnuts, a drizzle of sugar-free syrup and fresh raspberries. Repeat the layers.

  4. Whisk 250g soft cottage cheese with 1 tablespoon sour cream and 2-3 tablespoons sugar-free syrup.

  5. Cube the cooled sponge and layer with the cottage cheese mixture, walnuts and raspberries in another two glasses.

  6. Chill both trifles overnight and garnish with mint before serving.
