No-Bake Cottage Cheese Peach Plum Mousse

Creamy cottage-cheese mousse set with gelatin and folded with toasted walnuts, ripe peaches and plums. Naturally sweetened with erythritol and chilled to slice.

Ingredients

Ingredients updated to metric measurements
  • 120 gwalnuts

    pan-toasted

  • 100 mlwater
  • 20 ggelatin
  • 360 gcottage cheese

    5% fat

  • 100 gsour cream

    25% fat

  • 4 tsperythritol

    or sugar, to taste

  • peaches

    ripe, diced

  • plums

    ripe, diced

Instructions

  1. Pan-toast 120g walnuts, then coarsely chop and set aside.

  2. Bloom 20g gelatin in 100ml water and let swell for .

  3. Blend 360g cottage cheese, 100g sour cream and 4 teaspoons erythritol until completely smooth.

  4. Melt the bloomed gelatin in a water bath without letting it boil, then stir into the cheese cream.

  5. Fold in diced peaches, plums and the toasted walnuts.

  6. Pour into a mould and chill in the fridge until fully set before slicing.
