Pumpkin Seed and Date Candies — No Flour, No Sugar, No Gluten

A simple 5-minute no-bake candy made of pan-toasted ground pumpkin seeds, raisins, dates and a few dried apricots. Healthy, vegan, gluten-free.

Ingredients

Ingredients updated to metric measurements
  • 150 gpumpkin seeds

    pan-toasted

  • 130 graisins
  • 100 gdates
  • 20 gdried apricots

Instructions

  1. Toast pumpkin seeds in a pan, then grind in a mixer.

  2. Blend raisins, dates and dried apricots in a mixer.

  3. Combine the dried fruit paste with 120 g of the ground pumpkin seeds and mix thoroughly.

  4. Shape into round candies.

  5. Use the remaining 30 g ground pumpkin seeds as a coating, rolling each candy in them.

  6. Chill briefly before serving.
