  • vanilla

  • 3 tbsperythritol
  • 60 gbutter

    melted

  • 120 galmond flour
  • 1 tspbaking powder
  • pinchsalt
  • 1lemon

    zest and juice

Instructions

  1. Beat 3 eggs with vanilla and 3 tablespoons erythritol until pale and fluffy.

  2. Stir in 60g melted butter, then fold in 120g almond flour, 1 teaspoon baking powder and a pinch of salt.

  3. Add the zest and juice of 1/2 lemon and mix to a smooth batter.

  4. Spread into an oiled tart pan and bake at 180°C (350°F) for 25- until set and golden; cool before slicing.
