Ingredients

- 1boiled eggs
whites grated, yolks reserved
- 1egg yolk
for the sauce
- ½ tbspsour cream
- ⅛ tbspDijon mustard
- pinchsalt
- 1boiled quail eggs
- 30 gcucumber
- 25 gcherry tomatoes
- 10 gham
- red onion
a little
- lettuce leaves
- 1boiled yolks
for the cheese balls
- 7½ gcheese
grated
- ¼ tbspsauce
from above, for cheese balls
Instructions
Boil 3 eggs, separate whites from yolks and grate the whites finely.
Mix 1 raw egg yolk with 2 tablespoons sour cream, 1/2 tablespoon Dijon mustard and a pinch of salt until smooth.
Boil 3 quail eggs, then dice 120g cucumber, halve 100g cherry tomatoes and chop 40g ham.
Arrange lettuce leaves, tomatoes, cucumber, ham and a little red onion on a plate.
Mix 2 grated boiled yolks with 30g cheese and 1 tablespoon of the sauce, then roll into small balls and coat in grated egg white.
Place the cheese balls on top, add quail eggs and finish with the remaining sauce in the centre. Serve immediately.
