Ingredients

- cottage cheese
- curd cheese
- 1avocado
- Greek yogurt
- olive oil
- pinchsalt
- black pepper
Instructions
Beat 3 eggs with salt and pepper and cook into thin omelettes on an oiled pan.
Spread each omelette with a layer of cottage cheese and curd cheese.
Add sliced avocado, a drizzle of Greek yogurt and a splash of olive oil.
Roll up tightly, slice on the bias and serve immediately for 6 breakfast roll-ups.
