Ingredients

  • 3eggs
  • cottage cheese
  • curd cheese
  • 1avocado
  • Greek yogurt
  • olive oil
  • pinchsalt
  • black pepper

Instructions

  1. Beat 3 eggs with salt and pepper and cook into thin omelettes on an oiled pan.

  2. Spread each omelette with a layer of cottage cheese and curd cheese.

  3. Add sliced avocado, a drizzle of Greek yogurt and a splash of olive oil.

  4. Roll up tightly, slice on the bias and serve immediately for 6 breakfast roll-ups.
