Ingredients

  • 100 gchicken breast

    cooked, sliced

  • 60 gcucumbers

    sliced

  • pepper mix
  • salt
  • 1mandarin

    peeled and segmented

  • ⅔ tbspolive oil
  • ⅓ tbspwine vinegar
  • ⅓ tbspdijon mustard
  • 0.17 tbsphoney
  • lettuce leaves

Instructions

  1. Cook the chicken breast, let it cool and slice into bite-sized pieces (about 300g).

  2. Slice 180g cucumbers and combine with the chicken. Season lightly with salt and a pepper mix and toss.

  3. Peel 1 mandarin and separate into segments.

  4. Whisk together 2 tablespoons olive oil, 1 tablespoon wine vinegar, 1 tablespoon dijon mustard and 1/2 tablespoon honey with a pinch of salt.

  5. Arrange lettuce leaves on a plate, top with the chicken, cucumbers and mandarin segments and pour the dressing over.

  6. Serve immediately — this salad does not keep well.
