- 300 gchicken breast
cooked, sliced
- 180 gcucumbers
sliced
- pepper mix
- salt
- 1mandarin
peeled and segmented
- 2 tbspolive oil
- 1 tbspwine vinegar
- 1 tbspdijon mustard
- ½ tbsphoney
- lettuce leaves
Instructions
Cook the chicken breast, let it cool and slice into bite-sized pieces (about 300g).
Slice 180g cucumbers and combine with the chicken. Season lightly with salt and a pepper mix and toss.
Peel 1 mandarin and separate into segments.
Whisk together 2 tablespoons olive oil, 1 tablespoon wine vinegar, 1 tablespoon dijon mustard and 1/2 tablespoon honey with a pinch of salt.
Arrange lettuce leaves on a plate, top with the chicken, cucumbers and mandarin segments and pour the dressing over.
Serve immediately — this salad does not keep well.
