Watermelon Berry Gelatin Dessert (No Sugar)

Refreshing summer gelatin with fresh watermelon juice, blueberries, raspberries, blackberries and grapes set inside a watermelon shell. Sugar-free and stunning to slice.

Ingredients

  • 50 ggelatin
  • 200 mlwater
  • 300 gblueberries
  • 300 graspberries
  • 300 gblackberries
  • 450 ggrapes
  • 5 kgwatermelon

Instructions

  1. Bloom 50g gelatin in 200ml water and let it swell.

  2. Rinse 300g each of blueberries, raspberries and blackberries and 450g grapes. Drain well.

  3. Halve a 5kg watermelon, scoop out the seeded flesh and leave some shell intact.

  4. Blend the watermelon flesh with an immersion blender to get 1 liter of juice. Melt the bloomed gelatin gently and stir into the juice.

  5. Pack the watermelon shell with the mixed berries and grapes, then pour over the juice-gelatin mixture.

  6. Cover with plastic wrap, chill overnight in a bowl for stability, then slice cold to serve.
