Ingredients

  • 500 mlalmond milk
  • 2 tbspcornstarch

  • mixed fruit

  • 2oranges

  • 300 mlorange juice
  • 2 tsperythritol

    for the top layer

  • 1 tbspcornstarch

    for the top layer

Instructions

  1. Whisk 500ml almond milk with 2 tablespoons cornstarch, 2 teaspoons erythritol and 1g vanilla, then warm until it thickens.

  2. Tilt jars at an angle and pour in the almond-milk cream, then chill until set.

  3. Layer fresh fruit over the almond base in each jar.

  4. Warm 300ml orange juice with 2 teaspoons erythritol and 1 tablespoon cornstarch until thickened, then stir in the zest of 2 oranges.

  5. Pour the orange layer into the jars and chill again before decorating with fruit or nuts.
