Ingredients

Ingredients updated to metric measurements
  • 1000 gzucchini

    grated

  • 250 gerythritol

    150g + 100g, or sugar

  • 1lemon

    juiced, less if desired

Instructions

  1. Grate 1kg zucchini and toss with 150g erythritol to draw out the juice.

  2. Add the juice of 1 lemon and another 100g erythritol and stir well.

  3. Simmer on the stovetop for a few minutes until the syrup loosens.

  4. Transfer to an oven-safe dish and bake at 200°C for 50-.

  5. Cool and spoon into a clean jar for storage.
