Sugar-Free Coconut Yogurt Layered Dessert

Delicate coconut dessert with a yogurt-egg coconut-flour sponge, topped with a cocoa-kefir gelatin mousse and almond slivers. Chilled overnight, silky.

Ingredients

Ingredients updated to metric measurements
  • 10 ggelatin

    bloomed in 50ml water

  • 300 gyogurt
  • 2eggs
  • 2 tbspsugar-free syrup

    or honey

  • 50 gcoconut flour
  • 20 gcoconut flakes
  • almond slivers

    a handful

  • 200 gkefir

    or yogurt, for the topping

  • 15 gcocoa powder
  • 2½ tbspsugar-free syrup

    2-3 tablespoons, for the topping

Instructions

  1. Bloom 10g gelatin in 50ml water and let it swell.

  2. Whisk 300g yogurt with 2 eggs and 2 tablespoons sugar-free syrup.

  3. Stir in 50g coconut flour and 20g coconut flakes and rest .

  4. Pour into an oiled silicone mould, top with almond slivers and bake at 180°C for 40-.

  5. Melt the gelatin gently in a water bath and stir into 200g kefir with 15g cocoa and 2-3 tablespoons syrup.

  6. Pour the mousse over the cooled sponge and chill for several hours to set.
