Ingredients

- 10 ggelatin
bloomed in 50ml water
- 300 gyogurt
- 2eggs
- 2 tbspsugar-free syrup
or honey
- 50 gcoconut flour
- 20 gcoconut flakes
- almond slivers
a handful
- 200 gkefir
or yogurt, for the topping
- 15 gcocoa powder
- 2½ tbspsugar-free syrup
2-3 tablespoons, for the topping
Instructions
Bloom 10g gelatin in 50ml water and let it swell.
Whisk 300g yogurt with 2 eggs and 2 tablespoons sugar-free syrup.
Stir in 50g coconut flour and 20g coconut flakes and rest .
Pour into an oiled silicone mould, top with almond slivers and bake at 180°C for 40-.
Melt the gelatin gently in a water bath and stir into 200g kefir with 15g cocoa and 2-3 tablespoons syrup.
Pour the mousse over the cooled sponge and chill for several hours to set.
