Sugar-Free 3-Ingredient Apricot Walnut Bites

Tender dried apricots stuffed with toasted walnuts, dipped in both white and dark chocolate. A 3-ingredient no-bake treat ready in about 10 minutes.

  • 21walnut halves

    shelled

  • 12dried apricots
  • 85 gsugar-free white chocolate
  • 85 gdark chocolate
  • 2 tbspvegetable oil

Instructions

  1. Toast 21 walnut halves in a dry pan. Set 12 aside, finely chop the rest. Stuff each of the 12 dried apricots with a whole walnut half.

  2. Melt 85g sugar-free white chocolate over a water bath with 1 tablespoon oil, stir in the chopped walnuts.

  3. Roll half of the stuffed apricots in the white chocolate, coating all sides. Chill for 10- until firm.

  4. Melt 85g dark chocolate with 1 tablespoon oil over a water bath, coat the remaining bites and chill for 10- until set.
