Ingredients

  • 250 gpumpkin

    fresh

  • 2oranges

    peeled

  • 50 mlorange juice
  • 80 gbrown sugar
  • 120 mlorange juice

    for syrup

  • 14 gagar-agar
  • 100 gsugar

    for syrup

  • 2egg whites
  • 150 gsugar

    for whites

  • 1 tsppowdered sugar

    for dusting

  • 1 tspcornstarch

    for dusting

Instructions

  1. Simmer pumpkin and oranges in orange juice with brown sugar for ; blend to 200 g puree.

  2. Bloom agar-agar in orange juice; add to the puree with 100 g sugar and bring to a boil (simmer ).

  3. Whip egg whites and gradually add 150 g sugar to stiff peaks.

  4. Combine the hot agar mixture with the whipped whites and pipe shapes; freeze or set overnight.

  5. Dust with a mixture of powdered sugar and cornstarch.
