- 2oranges

- 50 mlorange juice
- 80 gbrown sugar
- 120 mlorange juice
for syrup
- 14 gagar-agar
- 100 gsugar
for syrup
- 2egg whites
- 150 gsugar
for whites
- 1 tsppowdered sugar
for dusting
- 1 tspcornstarch
for dusting
Instructions
Simmer pumpkin and oranges in orange juice with brown sugar for ; blend to 200 g puree.
Bloom agar-agar in orange juice; add to the puree with 100 g sugar and bring to a boil (simmer ).
Whip egg whites and gradually add 150 g sugar to stiff peaks.
Combine the hot agar mixture with the whipped whites and pipe shapes; freeze or set overnight.
Dust with a mixture of powdered sugar and cornstarch.
