Ingredients

  • 350 gpumpkin
  • 1orange

    120 g, zest and pulp

  • 150 mlwater
  • 14 gagar-agar

    7-14 g depending on firmness

  • 125 mlwater

    for agar

  • 60 mljerusalem artichoke syrup

    50-70 ml

  • 1 tbsplemon juice

Instructions

  1. Simmer pumpkin, orange zest and pulp in water until tender.

  2. Bloom agar-agar in water for 15-.

  3. Drain the pumpkin mixture and blend to a smooth puree; use 500 ml.

  4. Add bloomed agar, syrup and lemon juice; simmer 4-.

  5. Cool and chill for several hours until set.
