No-Bake Watermelon Cream Panna Cotta

Silky summer panna cotta with blended watermelon and honey, set with gelatin in a light cream base. A refreshing sugar-optional dessert that chills to a clean slice.

Ingredients

Ingredients updated to metric measurements
  • 100 mlwater
  • 30 ggelatin
  • 250 gwatermelon

    seedless, pureed

  • 3 tbsphoney

    or sugar-free syrup, to taste

  • 400 mlcream

    20%, or coconut or any plant milk

Instructions

  1. Bloom 30g gelatin in 100ml water and let it swell.

  2. Blend 250g seedless watermelon flesh with 2-3 tablespoons honey until smooth.

  3. Melt the bloomed gelatin in a water bath without letting it boil.

  4. Whisk together the watermelon puree, gelatin and 400ml cream until uniform.

  5. Pour into a mould and chill in the fridge for several hours until fully set.
