Fudgy no-bake truffles made from dates, cooked green lentils, peanut butter and cocoa, then rolled in extra cocoa. Naturally sweet with no added sugar.

Ingredients

Ingredients updated to metric measurements
  • 200 gdates

    soaked in boiling water, pitted

  • 80 ggreen lentils

    cooked until tender

  • 150 gpeanut butter
  • 50 gcocoa powder

    plus extra for rolling

Instructions

  1. Pour boiling water over 200g dates to soften. Cook 80g green lentils in water until tender, then drain both.

  2. Pit the dates and blend with the cooked lentils using a hand blender until smooth.

  3. Add 150g peanut butter and 50g cocoa powder and mix until you have a thick, plasticine-like dough.

  4. Shape into small balls and roll each truffle in extra cocoa powder until fully coated. Chill until firm.
