  • 150 gdried apricots

    boiling water over

  • 200 gIranian dates

    pitted

  • 200 gwalnuts

    pan-toasted

  • 50 gpumpkin seeds

    pan-toasted

  • 75 gsunflower seeds

    pan-toasted

  • salt

    to taste

  • 60 gsesame seeds

    toasted, for rolling

  • orange zest
  • 3 tbspsugar-free syrup

Instructions

  1. Pour boiling water over 150g dried apricots and 200g pitted dates and let them soften while you toast the nuts.

  2. Pan-toast 200g walnuts, 50g pumpkin seeds and 75g sunflower seeds, chop lightly and place half in a bowl.

  3. Blend the other half with the softened dried fruits, orange zest and a few spoons of water until a thick paste forms.

  4. Combine with 3 tablespoons sugar-free syrup, simmer 1-, mix well and roll tightly into a sausage shape in foil.

  5. Chill several hours in the fridge, then roll the log in 60g toasted sesame seeds and slice into rounds to serve.
