Ingredients

  • 3 tbspblack sesame seeds
  • 3 tbspwhite sesame seeds
  • 130 goats

    1 cup

  • 110 gdates

    pitted

  • 50 gdried cranberries

    or raisins

  • 30 gcoconut oil
  • 90 galmonds

    1/2 cup, pan-toasted

  • 90 gpeanuts

    1/2 cup, pan-toasted

  • 50 gpumpkin seeds

    pan-toasted

Instructions

  1. Combine 3 tablespoons each black and white sesame, 130g oats, 110g pitted dates, 50g cranberries and 30g coconut oil in a blender and grind to a sticky paste.

  2. Pan-toast 90g almonds, 90g peanuts and 50g pumpkin seeds separately until fragrant.

  3. Brush rectangular molds with olive oil and press half of the date-oat paste into the base.

  4. Scatter the toasted nuts and seeds evenly, then top with the remaining paste and flatten firmly.

  5. Chill until set, lift out of the molds and cut into bars — the flavor deepens overnight in the fridge.
