- 250 gIranian soft dates
pitted
- 100 galmonds
pan-toasted
- 80 gcoconut flakes
lightly toasted
- 80 gsugar-free white chocolate
- 2 tbspvegetable oil
Instructions
Soak 250g soft dates briefly in boiling water, then peel and mash with a fork until smooth.
Toast 100g almonds in a dry pan and grind in a blender. Lightly toast 80g coconut flakes in the same pan.
Mix the mashed dates with the ground almonds and toasted coconut, press firmly into a lined mold, and chill.
Melt 80g sugar-free white chocolate with 1-2 tablespoons oil over a water bath, pour over the bars, and chill until set. Slice.
